Easy Dinner: Italian Sausage, Roasted Potatoes, Spinach & Squash

I am all about easy dinners. Truth be told, I do love to cook, but being efficient with my time is even higher on my list of things I love (just behind coffee and my family). Sometimes I want to play around and experiment, taking my time. Other days chopping veggies is literally cathartic and I want to do it for hours. But most days I want to make dinner in about 30-45 minutes and be able to enjoy a healthful well balanced meal without using 24 ingredients and 12 pans. Plus this leaves me more time to focus on other things: like ACTION :-)

The other thing I LOVE about this meal is that I get home late some evenings from teaching so I rely on my lovely husband to pop things in the oven from time to time and this meal is really simple for him to handle since it is almost entirely roasted. The best.

So here is a great example of one of those meals.

What I Made:

  • Trader Joes Fresh Pork Italian Sausage - Roast in the oven at 400 degrees for 45 minutes. Drizzled with Olive Oil.
  • Little Roasted Potatoes - Roast in the oven at 400 degrees for 45 minutes. Drizzeld with Olive Oil & salt.
  • Sauteed Spinach Leaves with Diced Yellow Squash & Lemon - In a large pan, sauté the yellow squash in olive oil, salt, & pepper. At the end, toss in the spinach and serve with a squeeze of lemon. Takes 5-8 minutes over medium/high heat.
